Gluten Free information
ARROWROOT Extracted from the root of a west Indian plant. Thickens to a fine, clear gel so it is good for thickening fruit sauces for pies and tarts. Arrowroot is very bland traditionally used for "invalids". BUCKWHEAT FLOURContrary to its name it does not belong to the wheat family, but actually to the Rhubarb family. Used widely in soba (Japanese noodles), read soba labels carefully as some contain wheat flour also. It is also used widely in Russia, as breakfast groats, or in pancakes. The partial ground "groats" can be used to replace oats for a hot breakfast cereal. CHICK PEA FLOUR Also known as BESAN or CHANNA flour. It is a creamy colour with a strong flavour. It is commonly used in Indian cooking in fritters, as a thickener, or in sweets. CORNFLOUR Always read the label, as there are two types - 100% wheaten, or 100% maize flour. The maize cornflour is also called cornstarch. Cornflour gives a smooth clear thickening to sauces and is used in Asian cooking. Great for baking when a fine texture is wanted. Cornmeal Fine or coarsely ground. Useful in combination with other flours in baking. Keep on hand for cereals, crusts, polenta and batters. Make into cornbread, also it's an excellent addition to stuffing and meatloaf. It can be used to replace breadcrumbs in standard recipes. MILLET MEAL Can be added to gluten free bread mixes. One tablespoon millet added to 1 cup of gluten free maize cornflour in baking gives a tender moist product. POTATO FLOUR Made from grinding dried potato, it is good to mix with other flours, and is also a good thickener. Good for rolling food in before baking etc. e.g. bread rolls, meat balls. 1 teaspoon to 1 tablespoon can be added to 1 to 2 cups rice flour for better texture. RICE FLOUR It is made from brown or white rice. It has a silky texture and is very bland. Used alone, it makes a heavy product, so is best mixed with other flours. Be careful when using it for baking as it burns easily. Excellent for shortbread, melting moments and pikelets. Soy Flour Made from soya beans, this flour has a creamy yellow colour and is very nutritious. It has a strong nutty flavour, which can overpower the recipe, so it is best used with other flours. Very good in baking when using chocolate or spices. Tapioca Flour A white velvety flour from the cassava root. Used in many gluten free bread mixes, mixed with other flours for baking and thickening sauces, it has a light texture and is great in pancakes and waffles.
Chia Seed products
The Chia Company has expended its range of products! We have had the black and white seeds in stock, now the ground chia seeds and chia bran are in, and soon we will have the chia oil also!
Did you know that chia is the highest known source of plant based Omega 3? It also contains high levels of fibre and protein. It is mild tasting and can be added to any meal.
We have found that by mixing some seeds in with water and allowing it to form into a gel, when it is added to gluten free bread recipes, this gives the loaf more elasticity and texture. The chocolate cake I made was gluten free and absolutely delicious!
