We have a number of customers requesting sourdough cultures and here at last is one you can obtain and keep alive forever, able to be handed down to our children's children!
Sourdough is a healthy alternative to conventional yeasted breads with many nutritional benefits. Sourdough is the traditional method of bread making that dates back over 5000 years to Ancient Egypt. This age old process of leavening uses friendly cultures in synergy that rise the bread and give it a unique sour flavour. These friendly cultures also predigest the gluten content of the grain, thus improving its digestibility.
Up until the time the first commercially yeast was produced, all bread was made using sourdough methods. Traditionally most families had a sourdough culture and many were passed down from generation to generation. Very few survive to this day. These rare and mature cultures improve with age into a highly active state.
This German Sourdough Culture is extremely active and is great for producing a fluffy loaf of bread with a mild sour flavour.
Sorghum Flour
We have recently obtained sorghum flour. This whole grain has been stoneground milled at Kialla Pure Foods.
It is a flour which is gluten free, is high in protein, iron, niacin and dietary fibre, and a range of other minerals and vitamins. Like other flours, it is easily stored for long periods under refrigeration to retain its nutritional value.
Sorhum flour is ideal for cooking and baking.

This is a new product recently released. It is a fine powder made from organic sesame seed skins.
It is high protein with ideal amino acid composition.
High in iron, lower fat content, with a slightly nutt flavou.
It is suitble for gluten free diets, and can be used in baking
breads, cakes, muffins, biscuits etc. Sprinkle on salads or soups.
Tahini and Agave Butter
This is made from organic black sesame seeds and organic agave syrup to give a nutritious tasty spread. No animal fat or honey in the processing.

we have added a selection to add to our range of roasted nuts. The ones we have included at the moment are: Maple Almonds, Maple Walnuts, and Tamari Almonds. These come in a convenient resealable zip bag and best consumed within a week once opened.

LOVING EARTH Salad Sprinkles
This is so yummy—I even like to snack on this on its own! There has been a resurgence of preparing food from scratch. For me, there is a certain amount of satisfaction in preparing food for the family, and I enjoy it whenever I can take the time to make comfort food! Is your life hectic and full-on? When did you last make time to spend the afternoon preparing some yummy, nourishing food? The cooler season certainly makes it easier to spend a few hours preparing something for the oven, or making a hearty soup!
WHITE KIDNEY BEANS
These are also known as cannellini beans! Before washing kidney beans, spread them out and check for stones and damaged beans. Then place in a strainer and rinse thoroughly under cool running water.
There are two basic methods for pre-soaking. Either way, you will need 2 to 3 cups water per cup of beans. Place in a saucepan with the water, boil for two minutes, remove from heat, cover and allow to stand for two hours. Or if you have time, simply soak the beans in water for eight hours, or overnight, placing in the fridge in hot weather so they do not ferment.
Either way, before cooking, drain the soaking liquid and rinse the beans in clean water. You can then cook them on the stovetop or use a pressure cooker. On the stove, add three cups of fresh water or broth for each cup of dried beans. The liquid should be about 3 to 5 cm above the top of the beans. Bring to a boil and then reduce to simmer, partially covering the pot. Skim off any foam as necessary during the simmering process. Kidney beans generally take about 1 1/2 hours to become tender.
Pressure cooking takes about 1/2 hour to prepare. Either way, do not add any seasonings that are salty or acidic until after they are cooked. Adding earlier will make the beans tough and greatly increase the cooking time. Serve with other beans in a salad, blend or process with herbs to make a spread or dip, add to soups, or for a vegetarian twist in place of mince!

Are you looking for a setting agent? We now have a good range available, and just lately leaf gelatine! With the cooking shows on television again, we are seeing customers looking for more exotic ingredients. Powdered and leaf gelatine are usually interchangeable, remember it must be fully dissolved. Do not boil gelatine - this destroys its ability to set. Follow the recipe or packet instructions.
We try to keep vegetarian alternatives on hand, like agar agar and Carrageen (Irish Moss) (depending on availability). They, on the other hand, need to be dissolved and boiled for a while before allowing to cool to set.
