There has been a resurgence of preparing food from scratch. For me, there is a certain amount of satisfaction in preparing food for the family, and I enjoy it whenever I can take the time to make comfort food! Is your life hectic and full-on? When did you last make time to spend the afternoon preparing some yummy, nourishing food? The cooler season certainly makes it easier to spend a few hours preparing something for the oven, or making a hearty soup! WHITE KIDNEY BEANSThese are also known as cannellini beans! Before washing kidney beans, spread them out and check for stones and damaged beans. There are two basic methods for pre-soaking. Either way, you will need 2 to 3 cups water per cup of beans. Place in a saucepan with the water, boil for two minutes, remove from heat, cover and allow to stand for two hours. Or if you have time, simply soak the beans in water for eight hours, or overnight, placing in the fridge in hot weather so they do not ferment. Either way, before cooking, drain the soaking liquid and rinse the beans in clean water. You can then cook them on the stovetop or use a pressure cooker. On the stove, add three cups of fresh water or broth for each cup of dried beans. The liquid should be about 3 to 5 cm above the top of the beans. Bring to a boil and then reduce to simmer, partially covering the pot. Skim off any foam as necessary during the simmering process. Kidney beans generally take about 1 1/2 hours to become tender. Pressure cooking takes about 1/2 hour to prepare. Either way, do not add any seasonings that are salty or acidic until after they are cooked. Adding earlier will make the beans tough and greatly increase the cooking time. Serve with other beans in a salad, blend or process with herbs to make a spread or dip, add to soups, or for a vegetarian twist in place of mince! ELGIN ORGANICS
